Pumpkin Chip Cookies.

September 21st, 2006

A good friend from college (how I miss her, and miss Florida) shared this recipe with me.  It is a great fall treat with a cup of hot cocoa or coffee.

Pumpkin chip cookies

  • 1½ c. butter, softened.
  • 2 c. brown sugar
  • 2 c. sugar
  • 15 oz pumpkin
  • 2 eggs
  • 1 tsp vanilla
  • 4 c. flour
  • 2 c. quick oats
  • 2 tsp soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 2 c. semi sweet chips

Cream butter and sugar. Add pumpkin, egg, and vanilla.

In a separate bowl, mix flour, oats, soda, cinnamon, and salt. Then add to creamed mixture. Add chips. (Pecans can also be added, if desired.)

Drop by tbsp on greased cookie sheet. Bake at 350 for 10-12 min. Cool in wire rack.

Makes 10 dozen. (Recipe may be halved.)

Friendship Tea.

September 19th, 2006

With the recent advent of autumn in my area, I am really getting into the mood for fall food.  I am going to share some of my favorite autumn recipes this week.  Today’s recipe is for friendship tea.  A jar of mix tied with a ribbon with the recipe attached makes a fantastic hostess gift for those holiday get togethers, and a crock pot full of hot friendship tea is a festive drink for holiday gatherings.

Friendship Tea

1 cup tang
¼ tsp cloves
½ tsp cinnamon
½ cup instant unsweetened lemon flavored tea (Nestea makes it)

Add approx 1-2 tbsp of mix per mug of hot water.

This recipe makes up a small amount; double or triple recipe for sufficient yield.

A Day at the Garden.

September 5th, 2006

Rose

This weekend my husband and I went to the Japanese Festival at the Missouri Botanical Garden.  It was a lovely day and the weather was gorgeous, but there were far too many people there to really enjoy the beauty of the gardens.  We went with some of my husband’s family:  my sister-in-law, brother-in-law, niece, nephew, and my husband’s aunt.  Overall, we had a good time and enjoyed the weather, but the crowds were so thick we were ready to leave before we had seen everything.  Hubby and I plan to go back, as we purchased a membership, and I really want to see more of Glass in the Garden.  I love glass, and the sculptures I was able to see were so beautiful.

I wanted to post pictures of my niece and nephew here, but I need to check with my sister-in-law first, so this one of my husband will have to suffice.  :)
